~ Chocolate Salted Caramel Cheesecake...

Assalamualaikum dan Salam Sayang semua... Alhamdulillah bertemu lagi kita d hari Jumaat nie.. Begitu pantas sekali masa berlalu kan... Dah 18 hari kita d dalam bulan Mei nie.. Kepada anak² utamanya rakan² daughter yang meneruskan pengajian ke tahap yang lebih tinggi tu.. Doa aunty sentiasa bersama kalian... Jangan lupa kat aunty d sini tau.. Belajar rajin² yer.. Aunty tumpang gembira dengan kejayaan kalian.. :)



Kepada anak mummy .. Sheeryna.. Tahniah kerana telah d terima kat UMTECH ( UNITAR ).. Mummy tau minat anak mummy nie nak buka bakery kan.. :). Terpulang ler sama ada nak teruskan pengajian ke UNITAR dalam bidang business atau nak tukar kepada bidang bakery.. Buat ler keputusan yang bijak yer..  Mummy dan papa pasti mendoakan yang terbaik untuk diri mu... :). Baik ler.. Kita beralih pula kepada cerita resipi kali nie... Ermm... Begitu ler rupa kek yang d buat oleh orang yang kurang reti mendeco kek nie.. Hehehee... Semuanya serba main hentam gitu jer... Tapi bak kata orang.. Jangan pandang rupa jer.. Rasa mau tau gak kan.. ;).

For The Crust 
32 Oreo cookies _ finely processed into crumbs ( Diana guna food processor )
5 1/3 tbsp salted butter _ melted and cooled

Method 

  1. Grease a 9-inch springform pan. 
  2. Combine the Oreo crumbs and melted butter in a small bowl and stir until all of the crumbs are moistened. 
  3. Press into a thin layer covering the bottom and sides of the springform pan. 
  4. Put the crust in the freezer to set while preparing filling. 



Cheesecake
2 1/2 lb ( 5 8-oz pkgs ) cream cheese, at room temperature
1/8 tsp salt
1 1/2 cups sugar _ Diana bubuh 1 cawan 
1/3 cup sour cream _ Diana gantikan 1 cawan susu pekat manis
2 tsp lemon juice _ Diana bubuh 3 tbsp
2 tsp vanilla extract _ Diana bubuh 1 1/2 tsp
2 large egg yolks plus 6 large eggs, at room temperature 

1 cup good quality semi-sweet chocolate { cut or break into small pieces if not using chips } _ Diana guna Van Houten chocolate buttons
1 tsp vegetable oil _ Diana guna 1 tsp mentega 

Method 

  1. Preheat the oven to 500 degrees F. 
  2. Place the chocolate and vegetable oil in small microwaveable bowl, and heat in the microwave on high for one minute. Stir. If needed, continue heating and stirring the chocolate in 30-second increments until completely melted and smooth. Set aside to cool. 
  3. In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese at medium-low speed to break up and soften it slightly, about 1 minute. ( Lepas tu Diana bubuh susu pekat manis dan pukul sebati ).
  4. Scrape the beater and the bottom and sides of the bowl well with a rubber spatula. Add the salt and about half of the sugar and beat at medium-low speed until combined, about 1 minute. 
  5. Scrape the bowl; beat in the remaining sugar until combined, about 1 minute. Scrape the bowl; add the sour cream ( Diana tak bubuh ), lemon juice, and vanilla. Beat at low speed until combined, about 1 minute. Scrape the bowl; add the egg yolks and beat at medium-low speed until thoroughly combined, about 1 minute. 
  6. Scrape the bowl; add the remaining eggs 2 at a time, beating until thoroughly combined, about 1 minute, scraping the bowl between additions. 
  7. Pour about 1/3 of the cheesecake filling into a medium bowl and add the cooled melted chocolate. Stir until combined. 
  8. Remove crust from freezer and set the pan on a rimmed baking sheet to catch any spills in case the pan leaks. Pour the chocolate cheesecake filling into the crust first, then pour the remaining filling into the crust up to the brim of the crust / pan { you may not need to pour in all the cheesecake filling depending on the size of the pan you used }. 
  9. Bake 10 minutes; without opening the oven door, reduce the oven temperature to 200 degrees and continue to bake until the cheesecake reads about 150 degrees on an instant-read thermometer inserted in the center, about 1 1/2 hours. 
  10. Transfer the cake to a wire rack and cool until barely warm, 2 1/2 to 3 hours. 
  11. Wrap tightly in plastic wrap and refrigerate 6 - 8 hours or overnight.
  12. Meanwhile, prepare the caramel. 
  13. ** Diana bakar kek nie guna kaedah water bath pada suhu 160°C sehingga kek masak.


Salted Caramel
1 cup sugar
6 tablespoons salted butter cubed
2/3 cup heavy cream, at room temperature _ Diana gantikannya dengan 1 tin kecil Nestle Cream ( Original ) 

Method

  1. Melt the sugar over medium high heat in a large pot. 
  2. Whisk the sugar as it melts and cook until it becomes a deep amber color. 
  3. Add the butter and stir it in until melted. 
  4. Pour in the heavy cream ( mixture will foam ) and whisk until you get a smooth sauce. You may have some lumps but keep stirring until they have melted. 
  5. Remove from heat and let cool. {I f you still have some lumps in the caramel after it has cooled - strain it through a fine mesh strainer }.  
  6. Store, covered, in the fridge.

Ganache
8 oz semi-sweet chocolate _ chopped Diana guna Van Houten chocolate buttons )
1 cup heavy cream _ ( Diana gantikan dengan 1 tin kecil Nastle Cream )

Method

  1. To make the ganache, place the chopped chocolate in a heatproof bowl. 
  2. Heat the cream in a saucepan and bring to a simmer. 
  3. Immediately remove from the heat and pour the hot cream over the chopped chocolate. 
  4. Let stand 1 - 2 minutes, then whisk together until a smooth, thick ganache is formed.
::  Buat juga versi kat atas nie.. ^__^  ::

Roasted Pecans ( Diana tak buat )
Heat oven to 350 degrees F.  Spread the pecans on a baking sheet and roast for about 10-15 minutes or until browned and fragrant.  Let cool. 

Assembly
  1. Remove cheesecake from fridge.  
  2. Place it on a plate or cake stand.  
  3. Remove the sides of the spring form pan.  
  4. Pour the salted caramel on top of the cake { as much as you would like }. Put back in fridge.  
  5. Meanwhile, prepare the ganache.  Once the ganache is made, remove the cheesecake from the fridge and pour ganache on top of the caramel layer { as much as you would like }.  
  6. Garnish with roasted pecans.

Assalam kak,wah nmpk sedap sungguh2 kek tuh,ngan topping leleh2 tuh leh watkan air liur meleleh kak diana oi..xcanti deko penya kak,sy tgk unik n berseni jer..wah tahniah utk ank akak dpt unitar,minat bakery pasni leh la buka kdai kek n roti kan.
