Apa khabar hari ini? Doa dan harapan Diana moga kita semua sentiasa dianugerahkan kesihatan yang baik... Ermm.. Hari ini mahupun kelmarin memang tiada yang menyambut harijadi di rumah Diana.. Cuma esok baru ada yang menyambut harijadi.. Kiranya tersilap hari bulan pula buat kek ini.. Orang birthday esok tapi Diana buat Chocolate Cake ini kelmarin pula... Baru teringat esok ada yang menyambut harijadi... Mungkin esok buat kek lagi atau pun order saja di kedai kan.. hehe
Kelmarin juga Diana ambil gambar ini semua.. Haih!! Cahaya petang kelmarin memang tak cukup untuk ambil gambar yang Diana kehendaki.. Cahaya tak berapa terang sekarang sebelah petang hari.. Nak tak nak kena juga lah ambil gambar kek ini.. Untuk kek coklat Diana guna resipi dari blog Sweetapolita.. Keknya memang sangat moist dan sedap.. Untuk krimnya pula Diana hanya guna Cream Cheese Frosting dari resipi Martha Stewart.. Diana gabungkan keduanya dan jika hendak buat ikut resipi asal dari Sweetapolita boleh juga.. Terserahlah pada citarasa anda semua ya.. :). Terima kasih kepada Sweetapolita & Martha Stewart di atas resipi berkenaan dan izinkan Diana kongsikannya kat sini pula ya..
- 3/4 cup ( 170 g ) unsalted butter, softened
- 2 cups ( 400 g ) packed dark brown sugar
- 2 teaspoons (10 ml ) pure vanilla extract
- 3 eggs, at room temperature
- 1 3/4 cups ( 220 g ) all-purpose flour
- 3/4 cup ( 65 g ) unsweetened Dutch-processed cocoa powder
- 1 1/4 teaspoon ( 7 g ) baking soda
- 1 teaspoon ( 5 g ) baking powder
- 1 teaspoon ( 10 g ) kosher salt
- 1 1/2 cup ( 360 ml ) buttermilk, at room temperature _ ( Homemade : 1 cawan susu + 1 tbsp cuka putih / jus lemon. Rehatkan selama 20 minit. ) ** Untuk kek ini Diana buat : 1 1/2 cawan susu + 2 tbsp jus lemon.
- 1/4 cup ( 59 ml ) mayonnaise
Method
- Preheat oven to 350°F. Butter three 8-inch round cake pans, line with parchment rounds, and dust with flour, tapping out the excess.
- In a stand mixer fitted with the paddle attachment, beat the butter, brown sugar and vanilla on medium-high speed until lighter in color and slightly increased in volume, about 5 minutes. Lower the speed to medium and add the eggs, one at a time, mixing until each is fully incorporated before adding the next.
- Sift the flour, cocoa powder, baking soda and baking powder into a medium bowl. Add the salt to the dry ingredients after sifting, and whisk dry ingredients.
- Alternate dry ingredients and buttermilk into creamed mixture, beginning and ending with dry ingredients. Mix until just incorporated, or finish by hand gently. Fold mayonnaise into batter with a whisk, until just blended.
- Divide the batter evenly between the prepared pans. If possible, weigh the batter in each cake pan for 454 g each ( excluding the pans--you will want to tare the scale each time. ) This ensures even layers. Smooth with small offset palette knife, and bake for about 30 minutes, rotating once after 20 minutes. Cake is done when toothpick or skewer comes barely clean. Try not to over-bake. I tend to under-bake a few moments, so the skewer is a little bit gummy. This works well for a moist chocolate cake (not vanilla).
- Let pans cool on wire rack for 20 minutes, then invert cakes onto racks, gently, peeling away parchment rounds. Let cool completely.

Ingredients
- 8 ounces cream cheese, room temperature
- 8 tablespoons unsalted butter, cut into pieces, room temperature
- 1 cup confectioners' sugar
- 1 teaspoon pure vanilla extract _ ( Diana bubuh 1/2 tsp sahaja )
- Method
- Place cream cheese in a medium mixing bowl. Using a rubber spatula, soften cream cheese.
- Gradually add butter and continue beating until smooth and well blended.
- Sift in confectioners' sugar and continue beating until smooth.
- Add vanilla and stir to combine.
:: Cara Diana Melapis Kek ini ~
- Ambil sekeping kek dan sapu di atasnya dengan cream cheese frosting dan lapis lagi dengan sekeping kek di atasnya.
- Kemudian ulang langkah No.1 hingga kek habis dilapis.
- Sapukan sekeliling kek dengan cream cheese frosting.
- Kemudian sapukan secara nipis dengan fresh cream yang berwarna merah jambu dan warna krim.
- Hias mengikut citarasa masing-masing.

ReplyDeleteDi manakah saya boleh membeli fresh cream di Labuan. Sudah puas saya mencarinya namun di pasaraya di Labuan ini hanya banyak menjual UHT whip cream sahaja. Harap puan dapat membantu.
